Introduction

Originally this recipe called for cottage cheese instead of ricotta but I'm not a cottage cheese fan.
I think it's great and easier to work with the ricotta.

Ingredients

    4 large stalks of celery cut into 3 inch pieces
    2 scallions diced small
    2 Tbsp horseradish
    1/3 cup part skim ricotta cheese

Tips

You can add other herbs (I recommend fresh), garlic or shallots. This one can be played with a lot.


Directions

In small bowl mix together ricotta cheese, scallions and horseradish, until well blended. Spread mixture onto the celery rib and enjoy.
