Ingredients

    4 Med onions (260 gr) halved and sliced
    2tble sp Olive Oil
    1large Green Bell pepper (85gr) halved and sliced
    1Hot Chillie (5 gr) chopped
    2 Aubergine (360 gr) Cut into bite size pieces
    2 cloves garlic crushed
    145 gr Mushrooms
    3 large Courgettes (860 gr)
    6 Medium tomatoes (636 gr)
    Tomato Puree 500 gr pkt (Lidl)
    Salt and pepper to taste

Directions

Fry the onions and peppers in olive oil till soft, add all other ingredients, season and simmer for about 45 minutes. Check seasoning and serve hot.
