Introduction

Ingredients

    1 cup chopped zuchinni
    1 cup chopped summer squash
    1 large bell pepper (red, green or yellow)
    3/4 cup chopped tomatoes
    1 cup chunky chopped onion - sweet or vidilia
    1/4 cup FF Italian dressing

Tips

Options: Add shrimp 1/2 way through cooking and serve over brown rice.
Top with low fat grated cheese as a beautiful side dish to your meat.
Mix with pasta for a healthy "stir fry".
Serve over a baked potato as a flavorful topping.


Directions

Chop all veggies about the same size.
Quarter 1/2 inch slices of squash to give you an idea of size.
Once all veggies are "chunky" chopped, mix together, add dressing and mix to coat all veggies.

Cook in a grill basket over about 350 heat on your grill, sirring occasionally to evenly cook the veggies.
