Ingredients

    1 serving each of
    Blueberries
    Apples,
    *Peaches,
    *Aldi's Season's Choice Mixed Fruit (frozen), 1 cup (remove)
    *Royal Blend Rice Mix, 0.99 cup (remove) (3 cooked servings)
    Sweet Cherries, 1 cup, without pits (remove)

    *Pomegranate Juice Concentrate-Jarrow 1 Tbl., 1 tbsp (remove)
    Cranberries, dried, sweetened (craisins),

Directions

I make this after I have baked some rice. For this recipe, I baked 4 servings of Royal Rice Blend, but it is very good with brown jasmine rice. When I plan for this fruited rice, I bake the rice with cinnamon sticks, and remove the sticks before continuing with the recipe.

Measure into a bowl:
3 servings cooked rice, and 6 servings of fruit, chopped.

If you are using dried fruit for one serving, like craisins, reconstitute the dried fruit in 1 tablespoon pomegrante juice concentrate and 1 tablespoon water. Pour the juice and craisins into the salad.

Put all fruit and the juice into a bowl and mix. If you have not baked with cinnamon sticks, add powdered cinnamon now. Stir, cover and refrigerate at least 2 hours.

Serving Size: 6 servings, over a cup each.
