Ingredients

    1lb Lean Ground Chicken
    1 can Tomato Paste (6oz)
    Tempo Sloppy Joe Mix, whole packet
    1/4 tsp Liquid Smoke (optional)
    1 small onion
    1/4 Yellow Bell Pepper, petite diced
    1 large baby zucchini, chopped (optional)
    1 1/4 C water
    salt and pepper to taste

Tips

Add the zucchini to almost double the servings, and drastically reduce the already super low calories and still get in that protein! I can only eat half a 2 oz serving when I add it. That's only 47 calories! Leaves plenty of room for more protein shakes while keeping those calories in check!

For separating servings and easy freezing I use silicone cupcake liners. They're perfect for filling with small portions, and they are freezer and microwave safe too! I then place the filled cupcake liners in a storage container or two(Glad etc) and pop them in the freezer for future meals.


Directions

Lightly spray a pot with light olive oil. Slightly saute the onion and bell pepper. Add chicken and brown until all water evaporates. Add water, tomato paste, liquid smoke, salt and pepper, and the Sloppy Joe Mix and turn the heat to low, cover and simmer for 8 additional minutes.

Add zucchini and cover and simmer for two minutes. Turn heat off.

Separate into 9 2oz servings (more if you added the zucchini!)

Serving Size: Makes 9, 2oz servings without the zucchini.
