Introduction

Number of Servings: 12

Ingredients

    1 cup oat flour
    1/4 cup brown rice flour
    1 medium potato peeled, boiled and mashed
    1 tsp. salt
    1 tsp. olive oil
    1 medium egg, lightly beaten
    3/4 to 1 cup hot water

Tips

For great crunchy crackers, brush with olive oil, sprinkle with garlic and lightly salt. Cook in a 350 degree oven for five to ten minutes.


Directions

Mix all ingredients in a bowl. Cover and let rest an hour or more. Divide into twelve portions. Roll out on well floured (oat flour please) board. Heat a pan over medium-high flame. Loosen the dough from the board with a spatula and place the rolled-out dough in the dry, hot pan. Cook one or two minutes. Flip. Remove from pan and cover with foil. Repeat with remaining dough. After cooling, place in a sealed storage bad for an hour to make it more pliable.
