You can always leave out the raisins if you like, but these taste yummy without any added sugar (just natural fructose) and no white flour. I like mine chewy, but directions are given for crispy, too. Ingredients

    PAM spray
    3 mashed bananas (ripe)
    1/3 cup unsweetened applesauce
    2 cups oats
    1/4 cup unsweetened almond milk
    1/2 cup raisins
    1 tsp vanilla extract or flavoring
    1 tsp ground cinnamon
    sprinkle of nutmeg if desired


Tips

Since there are no additives like salt and baking powder, the cookies are low sodium and do not "rise" they only spread a little due to the soft ingredients. There is also no added fat. Enjoy a good for you cookie to not feel "deprived" of sweets!


Directions

Preheat Oven to 350. Spray Pam or line cookie sheet with parchment. In a large bowl, combine 3 mashed bananas (ripe), 1/3 cup applesauce, 1/4 cup almond milk. Mix in 2 cups oats well. Add 1/2 cup (not packed) raisins (optional), 1 tsp vanilla, 1 tsp ground cinnamon, and a sprinkle of nutmeg if you desire. Bake at 350 degrees for 15-20 minutes, turn pan halfway through and keep an eye on them. In different friend's kitchens these baked differently. For softer cookies, cook minimum time 'til just browning and let "set" on baking sheet. Crisper cookies bake longer until brown shows across tops and remove immediately to a cooling rack. Makes 24 white flour-free and sugar-free oatmeal raisin cookies. One cookie is a serving of 62 calories.
