Ingredients

    1 cup cauliflower, chopped
    3/4 cup shredded low-fat mozzarella cheese
    1 egg
    1 teaspoon dried oregano
    1/2 teaspoon crushed garlic
    1/2 cup pizza sauce
    1/2 cup mushrooms, chopped
    1/2 green bell pepper, chopped
    1/2 red onion, chopped
    Vegetable oil spray

Tips

Use a fork to press cauliflower and cheese mixture into the shape of a pizza crust. Watch recipe creator Cassey Ho demonstrate how quick and easy it is to make this recipe!

Directions

1. Shred cauliflower in a food processor
2. Microwave for 8 minutes
3. Mix in the egg, 1/2 cup of the cheese (save the rest for topping), garlic and oregano
4. Spray a pizza pan with vegetable oil spray and spread with cauliflower/cheese crust mixture
5. Bake in the oven for 10-15 min at 350 degrees
6. Remove crust from oven and top with sauce, mushrooms, onion, bell pepper and remaining cheese
7. Place back in the oven for another 10-15 min

    This sounds interesting and I might try it but I'm curious why everyone is so terrified of foods like pizza crust. I'm a diabetic and even on 1200 calories a day I can have a slice with a salad. I also tried using 70 cal pitas that I found. Crispy and yummy. - 5/29/14

    This is really good (I have made it before using other recipes from other sites, basically they are all the same). BUT it will come out much much better if you bake the crust on parchment on a baking stone. It will be much crispier and less soggy when you put the toppings on it. - 4/22/15

    I use a similar recipe for the cauliflower crust. Best tip I know: after you microwave the cauliflower, put it the cooled cauliflower (don't try this hot) in a kitchen towel and squeeze out the water...it has a lot of water and it will help the crust be less mushy.

    I made this last night and it was suprisingly delicious. I question the amount of cauliflower in the recipe, watching the video there seems to be much more than that and her pizza looked much larger than my 8" diameter one. - 3/27/14

    I will try this pizza tonight. Also, just a tip. Casey cross contaminates continuously through the video by touching her hair the touching the food. I hope she is really washing her hands in between camera shots! - 5/29/14

    This was amazing. I did "tweak" it a little. Steamed the cauliflower and then mashed with a fork as I don't have a food processor. Added an egg plus one egg white (I used 1.5 heads of cauliflower), the mozza and also sprinkled in Italian seasoning. Delicious! - 8/26/14

    I intend to try this recipe, but I call bullshit on the video. She used way more than 3/4 Cup mozzarella cheese. (and the hair, and the long sleeves. C'mon, SparkPeople, better to leave that video out of this recipe page. I don't care if she is the creator of the recipe, the vid is cringe-inducing.) - 9/20/15

    I've tried a cauliflower crust before and it was not good. However, if you add some kind of spices with the crust, it comes out much better. No egg needed. OMG! I barely made it through the video but lost it when she took a bite of the pizza. I won't make the mistake of watching her videos again. - 5/27/15

    Tastes Great! It is better eaten with a fork, crust had a cornbread-like consistency. I added more veggies than called for in the recipe, and would add black olives next time.

    Love the recipe & the pizza comes out great.....but I think 4 servings is more realistic at 120 cal for 1/4 of the pizza. Trying to squeeze 8 slices out of this is kind of ridiculous. Mine didn't come out as big as hers with the amounts used. Did anyone elses? - 8/30/17

    the cauliflower cheese egg mixture was wetter than shown in the video. I baked it for until it was set before putting the toppings on. I also used meaty sauce. I tasted pretty good! - 4/22/15

    I've made this pizza before and I like it. For my family I add pepperoni and or sausage. I also use frozen cauliflower, but I squeeze the water out and let cool some before adding egg and cheese. Usually I make regular dough for the family but they also want a taste of mine. - 1/21/15

    With no MW, steam the cauliflower. Don't need Trader Joe's to buy the ingredients. Most grocery stores will have all this. I would add a red, orange or yellow bell pepper. For color. I love cauliflower, use it for all kinds of things. Also diabetic, sometimes want to save carbs for other foods. - 7/13/14

    The crust did not set up as expected but I mistakenly added eggs and cheese prior to cooking the cauliflour. The texture of the crust was a different texture to get used to but I will try it again. - 7/11/14

    How about a crust made from whole grain flour? Use low fat meats and lots of vegetables in the toppings---low fat will cut calories. We need carbohydrates and the fiber from whole grains. Raw vegetables---including cauliflower--would be a good accompaniment for pizza.
