Ingredients

    1/2 onion, chopped
    1 roasted Hatch chile, diced
    1 block firm tofu, drained and pressed
    2 Tbsp. extra virgin olive oil
    2 cloves garlic, minced
    1 tsp. garlic powder
    1 tsp. onion powder
    dash sea salt
    1/2 tsp. black pepper
    1 Tbsp. soy sauce
    1/2 tsp. cumin powder
    1/2 tsp. curry powder

Tips

The curry adds very little flavor but it does add color, making the tofu look more like scrambled eggs so it's easier to "trick" the wee ones! I normally leave out the soy sauce as well, mainly because I just always forget to put it in and the dish is incredible without it.
I usually cook it just a tad longer as well, to allow all the flavors to meld together.


Directions

After draining tofu, press out all the liquid with paper towels and place in a bowl. Mash with fork or potato masher until crumbly.
Saute the onion and chile in olive oil over medium high heat. Add the tofu, spices and soy sauce and cook 8-12 minutes, stirring frequently.
Serve immediately.
