Ingredients

    1 cup (about 5 ounces) whole wheat flour
    1/2 cup (about 2 ounces) sesame seeds
    1/4 cup (about 1 1/2 ounces) cup wheat germ
    1/4 cup honey, divided
    4 tablespoons sesame oil (plain, not toasted finishing oil)
    6 tablespoons water

Directions

In a bowl, add flour, sesame seeds, and wheat germ, mix together.

In a small bowl, add 2 tablespoons of honey, seasame oil and water; mix well. Pour over flour and mix with a spoon. Add the remaining 2 tablespoons of honey and knead until everything comes together and the honey is thoroughly mixed in. Divide dough in half and wrap with plastic wrap. refrigerate for 30 minutes, so the do firms up and is easy for rolling.

Heat oven to 350 degrees

Line a baking sheet with parchment paper; set aside

On a parchment piece of paper, place the dough and lightly flour a rolling pin. Roll out dough to 1/8-inch thickness and, using a knife or pizza cutter, cut into small rectangles (approximately 1/4-inch by 3/4-inch). You can leave as is and cut in to crackers or roll the dough in the palm of your hand to make a stick shape. The key is to make sure your shapes are the same size to insure even baking.

Add your dough to prepared baking sheets and bake for about 10 minutes, flip and cook for about 5 minutes more or until lightly golden. Turn oven off and leave oven door partially open for 10 minutes.

Let sesame sticks cool and store in an airtight container.
