Introduction

I needed to use up some left-over rice and came up with this. I needed to use up some left-over rice and came up with this.
Number of Servings: 2

Ingredients

    3/4 cup white basmati rice
    1 cup frozen chopped spinach
    1/2 cup cherry tomatoes, quartered
    2 tbsp. red onion, minced
    1.5 oz. Gouda cheese grated
    1/8 cup olive oil
    1 tsp. each:
    salt, black pepper, oregano, turmeric, smoked paprika

Directions

Mix all ingredients well. Bake in small casserole dish at 350 degrees for 30 minutes.

Serving Size: Makes 2 - 1 cup servings
