Introduction

Number of Servings: 4

Ingredients

    2.5 cups V8 juice
    3 cups water
    1 cup fresh green beans (approx)
    6 baby carrots (approx)
    1 stalk celery
    2 medium red potatos (or golden for less firm)
    half of an onion (red or yellow)
    1 can or 2 ears fresh corn
    1 cup frozen peas
    1.5 cup crab meat (approx)
    1 tbs old bay (low sodium)
    1 tbs lea & perrins worcestershire sauce
    1 tbs dry mustard
    dash of red pepper
    salt and pepper to taste

Tips

I use this recipe for the left over crab meat after having fresh steamed crabs but you can use lump crab meat from the seafood counter just as well.


Directions

chop vegetables to desired size

combine liquids, veggies and seasonings in a pot and bring to a boil of med-high heat, once boiling reduce heat and simmer about 30 minutes, taste test the broth after simmering to see if more seasonings are needed or more liquid if seasonings are too strong.

add the crab meat and continue to simmer for another 45 minutes

Serving Size: Makes 4 meal-sized bowls of soup
