Number of Servings: 6

Ingredients

    1 cup uncooked rice
    6 3 oz boneless pieces of pork tenderloin / or chicken breasts
    1 4 oz can sliced mushrooms
    1 can diced tomatoes and green chilis
    1 can beef gravy
    1 medium onion sliced
    1 plum tomato sliced
    1 cup chicken broth
    1 cup water

Tips

Great make ahead recipe. Fix all in the morning or night before and refrigerate, place in oven and cook. Leftovers freeze well


Directions

Preheat oven to 400
Lightly brown off meat.
Spray a 9 x 13 baking dish with Pam
spread out raw rice
spread out sliced onions, tomato and mushrooms (don't stir)
Place meat on top of this
then pour all liquid over everything
Cover with foil and bake for 45 minutes
Remove foil and cook for 10-15 minutes more or until most of the liquid is absorbed.


Serving Size: 1/6 th of rice and one pork chop
