Ingredients

    1/2 cup fresh zucchini, sliced
    1/2 cup red onions, sliced
    1 portabella mushroom cap, sliced
    1/2 cup green or red pepper, sliced
    4 stalks of asparagus, in pieces
    1 clove garlic
    salt and pepper to taste
    1 tablespoon olive oil
    1 teaspoon sesame oil
    1/4 teaspoon cayenne pepper

Tips

If you are cooking outdoors, wrap the veggies in tin foil covered with the oil and seasoning and roast over the fire for about 10-12 minutes.


Directions

Place the oils in the saute pan and heat over medium low flame. Add the veggies and stir as they cook for about 5 minutes. Cover and steam for 1-2 more minutes if you prefer them more done.

Serving Size: makes 2 servings of 1 cup of vegetables
