Ingredients

    1/2 cup brown rice
    1 cup water
    1/2 tsp. sugar
    1/4 tsp. salt
    1 tsp. rice vinegar
    pinch of ginger
    1/3 cup imitation crab meat, minced
    1 tbsp. mayonnaise
    1 tsp. Sriracha or hot sauce
    1 sushi Nori wrapper (toasted)

Directions

Heat water to boiling. Add the rice, salt, sugar, vinegar and ginger. Bring to a boil. Reduce heat to a simmer. Cover and steam for forty to forty-five minutes. Cool to room temperature. Layer rice on a sushi mat. Mix the crab, Sriracha and mayonnaise. Place a Nori wrapper on the layer of rice. Place crab filling in the center and roll-up tight. Chill. Slice and wipe the knife blade with a clean wet cloth between cuts.

Serving Size: makes 2 servings of three pieces each.
