Ingredients

    1/2 pound sirloin steak (3/4 inch thick), trimmed
    1 Tablespoon Olive Oil (EVOL)
    1/2 sweet onion, sliced or more depending on taste
    1 medium green pepper, cut into rings
    1-2 garlic cloves, minced
    1 can (14 1/2 oz.) crushed tomatoes
    2 Tablespoons Lite Soy Sauce
    Salt and pepper to taste

Tips

Cycle 1: Serve over mock rice (riced cauliflower).
Cycle 2: Serve over brown rice or mashed potatoes.


Directions

Cut meat into two serving sizes.

Spray a wok, or put 1 Tablespoon EVOL and brown meat on both sides.

Add sliced onion, green pepper rings, garlic, tomatoes, soy sauce, salt and pepper.

Cover and simmer until meat is tender.

Serving Size: Makes 2 servings
