Ingredients

    4 chicken breasts
    1bag mini peppers ( about 15)
    Three small onions
    1 cup low sodium chicken stock
    1 Tb cumin
    1 Tb adobo seasoning
    1Tb chili powder

Tips

For low carb, I ate with just salsa and Greek yogurt (sour cream substitute).


Directions

Law onions and peppers in bottom of crock pot. Lay chicken beasts on top. add chicken stock. Add seasonings. cover and cook on low for 8 hours. Shred chicken. Mix.
Serve with favorite fajita fixings.
