Ingredients

1 medium spaghetti squash
2 tsp olive oil
1/2 small red onion, chopped
1 jalapeno, seeded & minced
1 medium red bell pepper, chopped
1 cup low sodium black beans, rinsed & drained
1/2 cup corn
1 tsp chili powder
1/3 cup cilantro, minced
1 Tbsp lime juice
1/2 tsp salt
Directions
1. Preheat oven to 375 degrees.
2. Cut squash in half and place halves on a baking pan that has been covered in aluminum foil. Roast 50 minutes or until tender. Remove from oven and allow to cool. Once cool enough to handle, scoop flesh from squash halves and set aside, leaving the shell intact.
3. Heat oil in a large pan and cook red onion, jalapeno and bell pepper for 2 minutes. Add beans, corn and chili powder and cook 1 minute longer. Add cooked squash, cilantro, lime juice and salt. Continue cooking 1 - 2 minutes more, or until heated through.
4. Fill squash halves with filling, mounding mixture in the center. Serve immediately.
