Ingredients

4 ripe bananas
1 C All purpose flour
1 C Whole Wheat Flour
1.5 tsp baking powder
.5 tsp. baking soda
.5 tsp kosher salt
1 lemon (juice and rind)
2 eggs
.25 C applesauce
2 Tb. Canola Oil
1/4 C melted butter
.5 C Truvia Baking Blend
.5 C Sugar
1 tsp. vanilla extract
Directions
Preheat oven to 350. Spray two 9x5x3 loaf pans with nonstick cooking oil spray. Mix Flour, baking powder, soda, salt togather with wire whisk.
In medium bowl, mash bananas, add lemon rind and juice, eggs, sugar, Truvia, butter, oil, vanilla and applesauce.
Make a well in center of flour mixture, add banana mixture stir till just incorporated. Do not overstir. Pour half in each pan sprayed with nonstick oil. Bake at 350 degrees F for 35-40 minutes, dark pan will cook faster than clear glass one.
