Introduction

A recipe I threw together by combining a pumpkin pancake recipe with a protein pancake recipe. I use oat flour, which I buy at the whole foods store but can be made by grinding whole oats in a coffee mill. Ingredients

    Pumpkin, canned, without salt, .33 cup
    Protein powder, 2 scoops
    Cinnamon, ground, 1 tsp
    Ginger, ground, .5 tsp
    Nutmeg, ground, .5 tsp
    *clove, ground = 1 tsp, .5 tsp
    Baking Powder, 2 tsp
    Oat flour, 0.75 cup
    Milk, 1 cup +

Tips

These pancakes darken quickly, so a thin consistency is better for cooking. We topped them with genuine maple syrup and a handful of pecan pieces.


Directions

Mix dry ingredients in a large bowl, set aside. Mix wet ingredients in a smaller bowl, and add to dry ingredients. I added a little extra milk to get a thinner consistency. Pour out in desired size, just under medium heat.
