Ingredients

Banana, fresh, 1 cup, mashed
Canola Oil, 1/3 cup
Egg, 1 large
Flour, white, 1.5 cup
Wheat bran, crude, .5 cup
Raw Fancy Mixed Nuts, Chopped 1 Cup
Raisins, golden seedless, 1/4 Cup
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Cinnamon, ground, 1 tsp
Nutmeg, ground, 1/4 tsp
Vanilla extract, 1 tsp
Salt, dash
Tips
+ Be sure to not over-mix batter when mixing wet and dry ingredients together; use a spatula and fold them together for a more tender muffin.
+ Use baking cups for easy cleanup and easy removal; I found that they often over-cook on the bottoms if not using baking cups.
+ Be sure to check the muffins @ 15 minutes; bake longer if you are baking more than one dish in the oven.
Directions
Preheat oven to 375 degrees.
In one large bowl, mix mashed bananas, vanilla, oil, & egg. In second bowl, sift or whisk flour, wheat bran, baking powder, baking soda, cinnamon, nutmeg & salt. Then, add nuts and raisins to dry ingredients, toss until coated well. Next, add dry ingredients to wet ingredients & fold until all ingredients ae incorporated. In lightly oiled (or lined with baking cups), add two to three tablespoons of batter to each cup. If mix is left over, distribute evenly to each cup. Bake 15 to 20 minutes, until toothpick inserted in to center of muffins come out clean.
