Ingredients

    1 pound lean ground turkey
    1/2 medium yellow onion, chopped
    1 whole green bell pepper
    1 16 oz. can pinto beans, drained and rinsed
    1 16 oz. can red kidney beans, drained and rinsed
    1 28 oz. can chopped stewed tomatoes
    1 Tbsp. Chili Powder
    1 Tbsp. Cumin Powder
    1/2 cup Pace Fire Roasted Tomato & Corn Salsa

Tips

The longer this simmers in the slow cooker the better.
I used Jenny O ground turkey 85/15, you could probably improve the calorie count by using 93% lean.
Any salsa can be used, I just wanted to try the fire roasted brand.
I served this with corn bread muffins and a large salad.


Directions

Chop yellow onion and green bell pepper, add to ground turkey in pan and brown on stove. Add chili powder and cumin to turkey. While this is going drain and rinse beans well. Add to crock pot. Add can stewed tomatoes (do not drain) to crock pot. After turkey mixture is browned add to ingredients in slow cooker. Add salsa and stir well. Cook on high for at least 2 hours.
