Introduction

Very delicious, light and healthy. It is supposed to be a side dish but I use it as a main dish. This works out because I can't stop myself from having a second serving ! Ingredients

    3 tbs olive oil
    5 cloves garlic
    Juice and zest of 1 lemon
    4 oz spinach leaves
    1lb cooked orzo
    4 oz chopped feta cheese
    1/4 cup chopped onion
    1/4 cup finely chopped fresh mint leaves

Tips

You can substitute orzo for whole wheat orzo or add chicken to make it a fuller meal.


Directions

In a small pan, warm oil over medium-low heat. Sauté garlic until lightly golden, 1-2 minutes. Transfer garlic and remaining oil in the pan to a bowl. Add lemon juice whisk to combine. Add Spinach and toss lightly. Add orzo, cheese, onion and mint. Toss to combine and serve
