Ingredients

    Sea Scallops
    Fresh Spinach
    Vegetable Broth

Tips

Add red pepper flakes, soy sauce or other seasoning to finished dish for variation.


Directions

Add 2 cups vegetable broth to sauté pan. Bring to simmer over med-high heat. Add scallops to pan and top with the fresh spinach. Turn heat to med and after 2 or 3 minutes turn scallops and allow spinach to mix into broth. Remove from heat when scallops are no long opaque and spinach is wilted, about 2-3 additional minutes. Salt and pepper to taste.
