Introduction

This is the most ridiculously delicious spaghetti EVER and I can't figure out why I never tried it before. After perusaling some veggie-spaghetti recipes on line, I combined some and made my own. I have some leftover ... maybe I'll remember to take a pic before I polish it off.

I'm not a vegetarian so don't anyone email me about some meat enzymes being in one of the ingredients or some obscure "purist" crap.

I just left out the meat to save calories ... I like meat but I'm not sure meat really adds enough the taste of something like this to justify the calories.

Ingredients


    Rotini Pasta (Any brand) - 16 Oz
    Spaghetti Sauce - 2 bottles (16 oz bottles)
    Zucchini - 2 small/medium - sliced/diced
    Onion - 1 medium - diced
    Mushrooms - 1 cup (I used a small jar)
    Chick Peas/Garbonzo beans (1 can - 16 oz)
    Diced Tomato - I can (14.5oz)
    Celery - 2 stalks
    Carrots - 2 medium size - sliced/diced

Tips

I cut the carrots, celery, and zucchini in half lengthwise first and then sliced them to make the pieces smaller. My mom has RA and it's hard for her to manage the big pieces and long pasta etc.


Directions

I got two small bottles of the sauce and the garbonzo beans simmering.

I sliced/diced as appropriate then sauteed the veggies and drained. I added the drained veggies to the sauce and let them simmer while I cooked the pasta.


Serving Size: Makes 6 HUGE servings - not sure of the size but HUGE
