Ingredients

    3 celery stalks
    2 carrot stalks
    2 yellow onions medium
    1/2 tbsp curry powder
    1 can tomoates with jalapaneo peppers
    1 can vegetable broth
    2 cans chickpeas rinsed
    1/2 c water
    1/2 tbsp olive oil

Directions

Chop and saute onions, red pepper, celery, carrots in 1 tbsp olive oil. At 1/1 tbsp curry pepper and keep cooking for about 10 minutes.

Add to crock pot with rinsed chickpeas, chopped tomato and 1/2 water.

Cook for about 6 hours until veg are a little tender.
