Number of Servings: 20

Ingredients

    2 cups fresh shredded cabbage
    3 scotch bell peppers
    1/4 cup shredded onion
    1/4 cup diced carrot
    1/4 peas
    1/4 corn
    (i sometimes buy a mixed bag of frozen peas corn and carrots. green beans are fine too.)
    4 whole cloves
    8-10 peppercorns
    1 tsp salt
    3 cups white vinegar

Directions

Snip off the stem of the peppers, cut each into 4 pieces, and keep the seeds. Place hot peppers, cabbage, carrots, onion, cloves, salt, and peppercorn in a quart size jar. Then add vinegar. Close jar tightly and let sit at least 24-48 hours before serving. Serve with chicken, fish, rice, plantains...
