    6 cups mashed roasted pumpkin (plain canned pumpkin can be substituted)
    5 cups vegetable broth (no salt added)
    1 onion, chopped
    1 garlic clove, minced
    2 tsp minced ginger root
    1.5 tsp olive oil
    1 tsp red chili pepper flakes (or less)
    1 Tbl curry powder
    1 tsp coriander seed, crushed
    1.5 tsp salt
    2 cups Fat free half and half
    1 cup light sour cream (or low fat milk)


1. In a stock pot, saute onion, garlic, ginger root in olive oil; add in spices (pepper flakes, curry powder, coriander). Saute 5 minutes to release flavors from spices.

2. Add vegetable broth and pumpkin puree to the pot. Bring to boil; reduce heat. Simmer for 20-25 minutes.

3. Add half and half and sour cream, cook 10 minutes more. Do not boil.

makes 10 1-cup servings.
