Ingredients

    1/3 - 1/2 C Pumpkin Puree (fresh or canned)
    1 Egg
    1 TBS butter
    1 TBS Truvia or other granular, no cal, sweetener
    1/2 tsp ground Cinnamon
    .25 tsp Pumpkin Pie Spice
    2 TBS Ground Flax Meal
    1 TBS Coconut Flour
    1 TBS Almond Flour
    1 tsp Vanilla Extract
    1/8th tsp Salt (optional)
    .5 tsp Baking Powder

Tips

You can sub out any of the flours/meal for others of your choosing. It works great with TBS of flax meal and 2 TBS of Almond. You don't need to coconut flour but I prefer the texture and flavor when I use it. This is a VERY ADAPTABLE recipe. Play with it until you like it!


Directions

In a large MUG, melt your butter, then add vanilla, Egg, Pumpkin Puree and stir until blended with a fork. Add all other ingredients to your mug and stir briskly until it's all incorporated. Put it in your microwave for about 2 min, 30 sec. You will have to figure out what time works best for your microwave. It may still be a little soft/runny in the middle. That's okay! Just dump it into a bowl, let it cool a little, then put a dollop of fat free Redi Whip on top and ENJOY with a cup of coffee or tea. Perfect GRAIN FREE, SUGAR free breakfast or dessert.

    Very nice. Moist. My only issues are the higher calories and the cholesterol. I think y low carb hubby will like. - 10/29/20
