Introduction

Ingredients

    1 Tbsp olive oil
    1 clove garlic, minced
    1 small onion, diced
    1 medium carrot, chopped
    1/2 stalk celery, chopped
    1 small potato with skins, cut into 1/2 inch cubes
    2 bay leaves
    1 can cannelloni beans, drained
    1 can of diced tomatoes
    32 oz vegetable stock
    1 cup frozen peas
    1 cup frozen french beans


Directions

1. Gently hear the diced onion and minced garlic in olive oil in a soup pot
2. Add bay leaves, chopped celery and carrots
3. When onion begins to become transparent, add the other potatoes, cannelloni beans and tomatoes.
4. Cover with vegetable stock , bring to boil and place a lid on the pot. Cook until the vegetables are tender
5. Add peas and beans at the end to just heat them but no cook.

Serving Size: 2 cups
