Number of Servings: 8

Ingredients

    1.5 lbs boneless, skinless chicken breast, cut into 1" pieces
    1.5 Tbsp olive oil
    1/2 red onion, diced
    1 tsp ginger root (fresh or from jar)
    1 cup chicken broth
    2/3 cup corn
    1 cup green beans
    1 can sliced water chestnuts
    2 tsp corn starch
    1/4 cup soy sauce
    Salt, pepper, white pepper to taste

Directions

Heat olive oil in wok or deep skillet. Toss in chicken pieces and stir-fry until no longer pink. Add onion and ginger just before chicken is finished cooking and stir fry until onion becomes translucent. Add chicken broth and vegetables and bring to a simmer. Stir corn starch into soy sauce and add mixture to broth. Add seasonings as desired. Simmer, stirring, until sauce begins to thicken; stir in water chestnuts and return to a simmer.

Check chicken pieces to be sure they are cooked through; if necessary, simmer a few minutes as more until they are done. Serve over brown rice.
