Ingredients

Boil manicotti shells per boxes direction

Meanwhile mix ricotta cheese, eggs, diced/steamed broccoli & mashed squash (I used butternut, pumpkin & acorn - but you could go canned pumpkin for ease). Season to taste (garlic, onion powder, oregano, parsley, salt, pepper)

Put mixture into a freezer bag and snip one corner

Spread 1/2 cup of pasta sauce along bottom of pyrex 9x13

When shells are done, pipe the filling into each shell. And place shell into the pan. Any leftover filling can be spread across the top of all the shells.

Top with the remaining sauce and all the motz cheese.

Directions

Preheat the oven to 350 and bake for 30 min
