Introduction

Beef Sausage with Red Potatoes, Kale, Carrots, and Onion. Beef Sausage with Red Potatoes, Kale, Carrots, and Onion.
Number of Servings: 6

Ingredients

    2 Beef Sausage Links
    8 cups of chopped Kale
    2 cups baby carrots
    8-10 small potatoes
    One large onion
    1 tbsp canola oil
    1/2 cup chicken broth
    Salt and pepper to taste

Directions

Heat up oil in dutch oven or large cooking pot.
Dice onions and saute them until slightly translucent.
Slice potatoes into 1 inch pieces.
Slice sausage.
Put onions, potatoes, sausage, carrots, and kale into pot.
Add chicken broth.
Stir all ingredients until well mixed.
Cover with lid and let cook until vegetables are tender.
Salt and pepper to taste.


Serving Size: Makes 4-6 one cup servings
