Ingredients

    1 cup Bob's Red Mill gluten free flour
    1 cup yellow cornmeal
    1 T. baking powder
    1/4 cup sugar (or honey)
    1/2 t. salt
    3/4 t. xanthan gum
    3/4 c. 1% milk
    1 large egg
    1/2 cup melted, unsalted butter

Tips

This is half of the sugar listed in the recipe that I adapted. You can add more or less sugar, depending on how you like your corn muffins.


Directions

Preheat oven to 375. Spray muffin pan with Pam. Mix dry ingredients, then add wet ingredients. Fill muffin tins about half way. Bake for 15-20 minutes.
