Ingredients

1 tbsp. olive oil
I onion, finely chopped
sea salt and ground black pepper
2 cloves garlic, finely chopped
4 thick stropes of bacon, or 125g pancetta cut into smallcubes
punch of crushed hot pepper flakes
2 tsp dried oregano
2 x 15oz (425 g) mixed beans drained and rinsed
1 3/4 cup pale ale
3 3/4 cup hot vegetable stock

Good with French crusty bread
Directions
1) Heat oil. Add onion and salt. Cook approx. 5 mins. Stir in garlic, and cook 30 secs.
2) Increase heat slightly, add bacon. Cook until golden. Drain excess fat. Sprinkle with pepper flakes and oregano. Stir in beans
3) Pour in ale, bring to boil and cook over high heat for five mins. Add stock, reduce heat and simmer gently for 20 - 25mins, stirring occasionally (until thickens). Season with salt and pepper.
Serving Size: Makes 4 - 1.5 cups servings
