Ingredients

CORNMEAL MIXTURE:
1 Cup Yellow Cornmeal
1/3 Cup Margarine (or shortening)
1 Tsp Allspice
1 Tsp Salt
1 Tsp Granulated Sugar
4 Cups Skim Milk (traditionally homo milk)
1 Small Onion - chopped very fine
EGG MIXTURE:
3 Eggs
1 Cup 1% Milk, Scalded (traditionally CREAM)
Directions
Preheat oven to 350*F.
Melt margarine in large sauce pan.
Add onion, sauté until clear.
Add Cornmeal, allspice, salt and sugar.
Slowly add Skim Milk.
Turn to LOW and cook approx. 20-30 min until thick, constantly stirring.
Meanwhile, beat eggs until frothy.
Add 1% milk.
Remove Cornmeal mixture from heat and fold in egg mixture.
Pour into casserole dish and bake at 350*F for 60 minutes.
