Introduction

While inspired by various asian cuisines, I'm not sure you could really call it authentic, lol! While inspired by various asian cuisines, I'm not sure you could really call it authentic, lol!

Ingredients

    4 oz Rice Noodles
    8 oz Snow White Mushrooms
    1/4 a Sweet Onion

    4 Ounces of Water
    2 Tbsp Soy Sauce
    2 Tbsp Peanut Butter
    1 Tbsp Siracha Hot Sauce
    1 Tbsp Garlic Power
    2 Tsp Curry Powder
    Salt to taste


Tips

If you can, have the noodles cooking once you add the soy sauce mixture to the pan so that they get done around the same time.

Use reduced sodium soy sauce to well, reduce the sodium.

Goes great topped with a poached egg, but I didn't include that in the recipe or nutrition.


Directions

Prepare noodles as directed on package.

Slice Mushrooms to about 1/5 inch strips
Cut off 1/4 of an onion, separate each ring and cut each ring into 4 petals

Combine 4 oz water with Soy Sauce, Garlic Powder, and Curry Powder

Spray Medium Pan with Vegetable Cooking Spray, heat to max temperature.
Add onion petals and cook for about two minutes flipping to make sure they don't get burnt.
Turn heat down to med-high heat, add mushrooms and salt
Keep flipping and mixing for one to two more minutes.

Pour in water/soy sauce mixture, reduce heat to medium
Let cook for 5-10 minutes

Turn heat back to high and add peanut butter and Siracha, mix well as the sauce reduces.

Once the sauce is the consistency you want (~2-3 minutes) remove from heat.

Add noodles and mix. Now it's ready to serve!
