Ingredients

    1 lb dry kidney beans
    1/2 green pepper, chopped
    1 onion, chopped
    2 cloves garlic, minced
    7 c water
    1 1/2 tsp salt
    1/4 tsp black pepper
    2 c white long grain rice

Tips

Top with hot sauce, salsa or sour cream.
Serve with corn bread or plantain chips


Directions

In slow cooker, combine everything except the rice. Cover and cook on high for 4-5 hrs. Stir in rice, cover and cook 20-25 additional minutes.
