Ingredients

    1 c dried split peas, uncooked (green, yellow or a mix)
    1/2 c dried lentils, uncooked
    1/3 c barley, uncooked
    1/4 c pastini pasta, uncooked
    8 c chicken stock
    1 lb turkey kielbasa, cut in bite-sized chunks
    1 28-oz can diced tomatoes
    16 oz frozen mixed vegetables
    3 c diced potatoes (skin on)
    2 T salt-free seasoning
    1 bay leaf

Directions

Combine all ingredients except pastini in a stock pot. Bring to a boil, then reduce heat and simmer for several hours until potatoes are tender. Add pastini in the last 15 minutes of cooking. Soup will be thick. Add more water as needed to thin to your preference. Remove bay leaf before serving.

Serving Size: Makes 12-15 1-cup servings (depending on how much water you add to thin)
