Ingredients

    4 c. Chicken Stock or Broth
    4 slices bacon, cooked crispy
    4oz can chopped green chilies
    1 bag 19oz frozen corn (family sized steamable bag)
    1 c. fat free half & half
    1/2 c. fat free Fage Greek yogurt
    1 pkt HMR chicken soup powder
    1 medium onion, chopped
    4 cloves garlic, minced
    1/2 tsp. smoked paprika
    1/4 tsp. ground red pepper
    1/2 c. fat free cheese, shredded
    1 tbsp. olive oil
    2 tsp.-1 tbsp. bacon grease
    Salt & Pepper to taste
    1/2 tsp. Cavender's Greek Seasoning

Directions

Cook onion and garlic in olive oil until tender and clear. Cook bacon, drain off fat but reserve 2 tsp. - 1 tbsp. of grease. Steam corn in microwave for about 7 mins (follow instructions on bag). Add chicken stock/broth to large blender, add half and half, chilies, yogurt, spices, HMR soup powder, cheese, steamed corn, onions & garlic, and bacon as well. Blend well, hold lid because it will be very full (blender needs to have at least 10 cup capacity). Add 1 cup servings to microwavable cup and heat individually, or heat in pan. Serve with shredded cheese if desired. Enjoy!
