Ingredients

18 egg whites or equivalient egg white substitute
3 whole fresh eggs
1 cup fat-free cottage cheese
1 cup plain dry oatmeal
8 tbls Splenda (optional)
2 heaping tbls cinnamon
1/4 cup pancake mix
1/4 cup water
1tsp salt
Tips
These pancakes are designed for LoveLivingFit program and contain the perfect combination of equal ratio protien and carbohydrates. Perfect for a healthy meal every 2-1/2 to 3 hours throughout the day. Enjoy!
Directions
Combine all ingredients in a blender and blend on high for one minute (Batter will be soupy.)
In an omelet pan, cook pancakes over a medium heat (1/2 heaping cup per pancake) – turn when golden brown.
Roll pancake immediately and place in a snack size zip-lock bag to store for a quick healthy meal on the go or serve while hot. Caution: Allowing pancakes to cool outside the bag will cause them to be dry and chewy.
Store refrigerated for up to 5 days. Freezing is not recommended.
Pancakes can be eaten cold or warmed in the microwave for 15 seconds. Serve with fat-free, sugar-free syrup or fat free yogurt and berries if desired.
