Ingredients

    24 mini muffin cup liners
    1 cup almond butter
    1/3 cup powdered sugar
    1 teaspoon vanilla extract
    1 bag (12 ounces) dark chocolate chips
    24 toasted slivered almonds, optional



Tips

To make smaller pieces, line an 8- or 9-inch square baking dish with no stick foil, allowing ends of foil to extend over the top of the dish. Pat almond butter mixture into the pan. Top with melted chocolate and a scattering of almonds. Refrigerate to allow chocolate to harden. Remove from pan; cut into small pieces. Store as above.


Directions

Place paper liners in 24 mini muffin cups; set aside. In medium bowl, combine almond butter, powdered sugar and vanilla; beat until smooth and combined. Divide mixture into 24 small balls; flatten each slightly to form a disk. In 2 cup glass measure, microwave chocolate chips (50% power) 2 minutes, stirring after 1 minute. Allow to sit 1 minute and stir until smooth. Drizzle a scant teaspoon chocolate into the bottom of a paper liner; place disk over chocolate and drizzle each with about 1 teaspoon melted chocolate. If desired, place a slivered almond in each candy. Refrigerate 15 minutes until chocolate has hardened. Store in an airtight container at room temperature.
