Introduction

This can be used for tacos, burritos, or my favorite - enchiladas. This can be used for tacos, burritos, or my favorite - enchiladas.

Ingredients

    4 cans Hunt's fire roasted diced tomatoes
    2 pounds boneless/skinless chicken breasts
    1 can diced green chile peppers

Tips

You can add a packet of taco seasoning but I don't find it necessary. Sometimes I will add a can of fire roasted corn or a can of black beans.


Directions

Add frozen chicken breasts, tomatoes, and chile peppers to crockpot and cook on low for 6-8 hours or thawed chicken breasts for 3-5 hours.

Shred chicken with fork (it will fall apart after cooking for so long) right before serving.
