Ingredients

1 green onion chopped
1 pkg of Green Giant Frozen Spinach
4 large eggs
1 cup egg beaters
1 T extra virgin olive oil
Extra Virgin Olive Oil Cooking Spray
1/3 cup of Bob's Red Mill Gluten Free Bread Mix
(made from garbanzo beans)
1/2 tsp baking soda
pepper, chili powder, spices to taste
1 cup Almond Coconut milk unsweetened
1/2 cup feta cheese
Directions
Preheat oven to 400ºF
Spray 10 inch quiche dish with olive oil cooking spray.
Chop 1 stalk of green onion, Microwave on high for 60 seconds to wilt.
In a large bowl whisk 4 large eggs and 1 cup of Egg Beaters Egg Whites, 1 cup of Almond Coconut Milk, Braggs Aminos, Baking Soda, and 1/4 cup of Bob's Red Mill Gluten Free Bread Mix (crushed Garbanza Beans), Olive Oil.
Mix well and pour into the quiche dish. Top with feta
Bake for 30-35 minutes until the center is set and outside edge is brown. Let set for 5 minutes, slice into 6ths and serve.
