Introduction

I had some leftover black eyed peas cooked up. This is a basic recipe that can be doctored. Add whatever beans or veggies you have or what sounds good. Yumm! Beans are good protein and fiber. Ingredients

    2 cups cooked Black-eyed peas
    1 can Yellow Sweet Corn
    5 oz chopped Green Olives,
    1/4 cup Olive Oil
    Juice of 1/2 a lemon, fresh squeezed
    1/2 cup chopped onions
    1 tsp cumin
    salt and pepper

Directions

Combine all ingredients. Serve as a salad or with tortilla chips. Vegan and gluten free.
