Ingredients

* Brown Sugar, 1 cup, unpacked
* Egg Yolk, 3 large
* Egg, fresh, 1 large
* Butter, unsalted, 100 grams
* *Flour, white, 2 cup
For the stuffing:
* Egg Yolk, 3 large
* *Flour, white, 0.5 cup
* Brown Sugar, 8 tsp packed
* Milk, 1%, 1 cup
Directions
makes about 32 cupcakes.
Put the first five ingredients (sugar, yolks, an egg, flour and butter) into a big bowl and mix with your hands until a smooth quite heavy dough is formed. Put immediately into the fridge for at least 4 hours (it's good to prepare the dough even earlier,the longer in the fridge, the better). Prepare the cupcakes teflon forms (the smaller the better) (but NOTE: not the paper forms for muffins). Put the dough out of the fridge and form quite a thick layer of it on the table. Cut out circles and then place them into the cupcakes form. (NOTE: the cupcakes need to be EMPTY inside, they are not muffins, LOL). Put the cupcakes into the oven for about 20 minutes (they need to be golden, not brown) Start preparing the stuffing:
Mix the yolks with sugar until they're almost white (about 6 minutes). Put flour into it and mix as well. Then add cold milk and mix. When everything is smooth, put the pot on the cooker and cook until the stuffing gets dense. Then immediately take it away from fire. Remember to first let the cupcakes cool down and then put the stuffing into them. Delicious.
