Introduction

Ingredients

    1 C dry polenta
    4 C boiling water
    1 T butter
    1 T olive oil
    4 bell peppers (any color)
    2 T vegetable broth
    1 garlic clove
    1/4 t ground pepper
    paprika

Directions

Preheat oven to 350 degrees. Cook polenta in a double boiler. Add butter and olive oil. Prepare peppers by slicing off tops and removing seeds. Sauté minced garlic and chopped tomatoes in vegetable broth. Add to polenta. Stuff peppers. Sprinkle with paprika. Bake on a cookie tray for 40 minutes.
