Introduction

Number of Servings: 10

Ingredients

    3 large cloves garlic, minced
    1.5 large onions, chopped. set aside 1 cup
    6 carrots, scrubbed and chopped into medallions
    6 celery stalks, scrubbed and chopped
    2C spinach, chiffonaded (skinny strips)
    1 hormel beef smoked sausage, chopped
    1lb cod, cubed
    3T butter
    3T fish sauce
    3T sambal olek
    2 boxes broth (chicken or beef or veg)
    1 can coconut milk (ingredients should only be coconut and water)

    Saute 1C of onions in butter. Once translucent, add garlic, stir 45 seconds. Add beef sausage and saute until browned. Add broth, remaining vegetables, and cod. Bring to a boil, turn down to a simmer. Simmer 10 minutes. Add Spinach. Add coconut milk

Tips

this makes enough for my husband and i to eat for lunch for 5 days with some left over for snacks.
