This soup starts with tons of fresh veggies that you simmer in a combination of water and chicken broth with savory spices until tender. Then puree, strain and voila! It is very rich and satisfying - and better yet - very low in calories! Ingredients

    2 TBSP Olive Oil
    1 Large Onion, Chopped
    4 large Carrots, roughly chopped
    3 large ribs of celery, roughly chopped
    8 large cremini mushrooms, chopped
    4 cups Broccoli, roughly chopped
    4 cups Cauliflower, roughly chopped
    10 oz Pinot Grigio
    2 TBSP fresh rosemary, Finely chopped
    2 tsp granulated garlic
    salt to taste
    hot pepper flakes to taste

Directions

Sautee Onion, Celery and Carrots in Olive oil. Add Mushrooms once veggies are tender and slightly translucent. Continue to sautee until mushrooms are tender and slightly caramelized. Add wine and all of the spices. Bring to a boil. reduce to a simmer and add all remaining ingredients. Bring to a boil, reduce heat and simmer, covered, for about an hour or until veggies are very tender. Remove from heat. Puree in batches, and pass through a medium sieve. Serve warm with a bit of grated cheese on top.
