Ingredients

    1 cup dry Quinoa - prepared (4 cups)
    1 or two large beets, roasted or boiled, peeled and cubed
    1/2 butternut squash cooked and cubed
    1/2 red pepper cubed
    1 carrot cubed
    1/2 medium onion cubed

    2 tbsp good olive oil
    4 tbsp white or red wine vinegar

    1 bed of raw spinach per serving
    1 oz of goat cheese for garnish

Tips

An extra drizzle of olive oil never goes awry.


Directions

Mix all the vegetables and dressing except the spinach in a large bowl. Serve 1/4 on a bed of fresh spinach and an ounce of goat cheese
